How to share documents from Windows and Ubuntu.

Hello, I have a SSD that has a Windows partition, a personal partition and the reset for Ubuntu partitions. In windows you can change to path of Document, Pictures, etc. to a different directory path. I don't see a way to change the directory path for those folders in Ubuntu like Windows. Is there a way to remap Documents and other Personal folders?

Also what file system do you recommend for this personal partition that would be used by both Windows 10 and Ubuntu?
